Bruschetta Chicken

The best recipes are quick, easy and low in WW points. This one fits the bill! Only 2 points per serving.

Ingredients:

6 boneless chicken breasts

1 pound tomatoes, chopped

1 bunch basil, chopped

3-4 garlic cloves, finely diced

6 Tbsp balsamic vinegar

1 cup Kraft Fat Free Mozzarella

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine tomatoes, garlic, basil, balsamic vinegar and salt to taste.

3. Place the chicken in a baking dish sprayed with cooking spray. Top with tomato mixture.

4. Top each piece with 1/4 cup of the mozzarella. Cover pan tightly with foil.

5. Bake for 35 minutes. Remove foil and bake 5-7 minutes longer.

One serving (1 chicken breast) = 2 points on WW.

Drizzle with aged balsamic, or balsamic glaze. Trader Joe’s makes a pretty good one at a very good price point. Enjoy!
